Love that posole — again and again and again


This isn't a book review, it's just love note about Terry Hope Romero's cookbooks. If you don't already own Vegan Eats World or Viva Vegan, you should seriously consider adding one or both to your collection. Everything we make from them is delicious. Take the Korean veggie bulgogi (from Vegan Eats World) pictured above. My husband made a simplified version of it, and said it was very easy. He used only tofu  and mushrooms, and he added kale and kimchi for a fabulous meal. It was so good I couldn't believe he'd made it himself.


We've cooked lots of meals from Viva Vegan, but the dish we keep coming back to again and again is quick red posole with beans. At first we made it with canned hominy, but then decided we don't really like hominy as much as we like regular corn, so now we make it with fresh or frozen yellow corn. I suppose it's not really posole any more, but it's still amazing.


It's so easy it practically makes itself, and so rich and flavorful that we've served it to guests on more than one occasion.


We've added different vegetables, and topped it with everything from traditional shredded cabbage, avocado, thinly sliced radishes, and tortilla chips ...


to crazy things like brussels sprouts and pumpkin seeds. It's one of our favorite go-to fast dinners. We almost always have the ingredients on hand, and the best part is we never get tired of it!

Ask your doctor about meat



Here is PETA's version of all the "ask your doctor about (various drugs)" ads we are bombarded with on TV. PETA isn't always known for constraint or good taste, but what do you think of this one? I think it's about two years old, but is making the rounds again.
